Barley Chicken Vegetable Soup

Ingredients

4 tbsp. olive oil

1 tsp. minced garlic

1 cup chopped onions

1 cup chopped zucchini

1 cup chopped carrots

1 cup chopped cauliflower

1 qt. low-sodium vegetable broth or just water

4 cup Italian tomatoes, canned

2 cup cooked barley

12 oz. cooked, boneless, skinless chicken breasts, chopped

4 tsp. Italian herb seasoning mix

Preparation Instructions

1. In a large saucepan, over medium-high heat, sauté garlic and onion in oil until the onion is translucent, about 5 minutes.

2. Add vegetables and sauté lightly. Add broth and tomatoes and simmer 5-8 minutes.

3. Stir in barley, chicken and herbs. Heat thoroughly. Serve.
