How to Make Basic Posole

A hearty bowl of stew made with white hominy and pork tenderloin, this basic recipe for the classic Mexican favorite, Posole, is easy to make at home and requires only a few ingredients. 

Ingredients:
1 lb. pork tenderloin, cut into bite-sized chunks
2 teaspoons Southwest chipotle seasoning blend
15 oz. canned white hominy
15 oz. Mexican-style stewed tomatoes with jalapenos (undrained)
1 cup water
¼ cup chopped fresh cilantro
Olive oil spray

Directions:
1. Spray a large skillet with olive oil and place over medium high heat.

2. Sprinkle the chipotle seasoning over the pork, then spray with olive oil.

3. Place the pork in the skillet and sautĂ© until golden, about 4 minutes. Add the hominy, tomatoes, and water. Bring to a boil. Reduce heat and cover. Simmer until pork is tender, about 20 minutes. Stir in the cilantro.
