How to Make Traditional Hominy Bread

Traditional hominy bread makes a heartwarming snack and comforting dish served as a side dish or snack. Similar to cornbread, hominy bread is made with hominy grits, which are corn kernels without the hull or bran and germ.

Ingredients:
½ cup hominy grits
2 ½ cups water
½ teaspoon salt
2 tablespoons butter
2 eggs, beaten
2 cups milk
1 cup white cornmeal

Directions:
1. In the top of a double broiler, pour the hominy grits, water, and salt. Stir until the mixture comes to a simmer. Cover and cook for 45 minutes.

2. In the meantime, preheat the oven to 425 degrees F. Grease a 1 ½ quart baking dish; set aside.

3. To the hot hominy, add the butter, eggs, and 1 cup milk. Mix well. Add the cornmeal and 1 cup of milk, stirring well.

4. Pour the batter into the prepared baking dish. Bake for 45 min., or until the top is puffy. Serve with a spoon.
